Love Reese’s Peanut Butter Cups, but not a fan of the ingredients?? Then you gotta try these! They are delicious, and super easy to make.

I don’t know about you, but I find it hard to get in enough good fats. I mean, there are only so many avocados and nuts that a girl can eat. ๐Ÿ˜† These cups are a great mid-day snack, or after-dinner treat. If you want a few more grams of protein, then substitute peanut butter for the almond butter.

Ingredients (makes 8 bombs)

  • almond butter- 1/2 cup
  • coconut oil- 1/4 cup
  • cocoa powder- 2 2/3 tbsps
  • vanilla extract- 1 tsp
  • stevia powder- 1/2 tsp

Instructions

  1. Arrange paper baking cups on a plate or baking sheet
  2. Set up a double boiler to melt the almond butter and coconut oil
    • If you don’t have one (I don’t), just put the ingredients in a microwave-safe bowl, and slowly heat them until they are melted. Use a very low setting for short periods of time to make sure nothing burns
  3. Once they are melted, stir in the cocoa powder
  4. In a small bowl, mix the vanilla and stevia powder until the stevia is fully dissolved
  5. Add the vanilla mixture to the almond butter mixture, and stir well
  6. Pour into the baking cups, and put them in the freezer for 30 minutes, or until they are solid.
  7. Transfer to an airtight container and keep them frozen
